ORANGE ISLAND CHICKEN
1/2 C orange juice
1/3 C soy sauce
1 tsp ground ginger
1/2 tsp onion powder
1 tsp orange zest
4-6 boneless, skinless chicken breasts
1/2 C flour
3 TBL vegetable oil
For marinade: In a zipper bag, combine the orange juice, soy sauce, ginger,
onion powder and orange zest. Mix well. Add the chicken pieces to the
marinade and refrigerate overnight, or for at least 8 hours.
Oven 350. Remove the chicken from the marinade (Don't discard marinade.)
Coat the chicken with flour. In a large skillet, heat the oil and brown the
chicken over med high heat. Transfer to a 9X13 inch baking dish. Pour
remaining marinade over chicken. Cover and bake for 30 min. Remove cover and
bake for 15 min more.
